As Pastry Chef and a senior member of the kitchen brigade, he/she is responsible for supporting all aspects of pastry kitchen management, team training and development, team planning, food budget management, menu delivery and development.
The Pastry Chef will perform the following tasks to the highest standards:
Oversee and conduct the preparation of desserts and the baking of breads in the kitchen.
Oversee and conduct the preparation of mis-en-place and dispense all A la Carte and buffet items for all day Dining, Room Service and for any other outlets in time.
Ensure all pastries, cakes, croissants, breads etc. are of the highest standards in terms of taste and presentation when on display / sale and are stored at the right temperature. Develop dessert & bakery recipes.
Maintain an inventory of ingredients to achieve cost-efficiency for the hotel.
Maintain high standard of hygiene and cleanliness at all times in the area of work.
Minimize breakage & wastage in the Kitchen.
Maintain a good healthy relationship with the colleagues and co - workers.
Undertake all normal and ancillary duties associated with this department and accept variances to the above duties as and when required to maintain operational effectiveness.
Conduct regular training within the department and schedule team members and self to attend all assigned Training as requested by the Management.
Be aware of all emergency procedures.
Perform all other tasks as requested by management.
Culinary arts or any other relevant educational qualification.
Minimum 3 years of experience as senior supervisor in Pastry Kitchen with a 5* chain hotel.
Extremely sound knowledge and expertise in pastry, bakery and confectionary kitchen operations.
Knowledge of food costing, quality control, menu planning, budgeting, staff training, etc.
A task master with strong leadership qualities.
Good English communication skills both written & verbal, Italian is a plus.
